The Perfect Road Trip Breakfast

IMG_7185

I made the same breakfast every single day during my road trip. I wanted something easy and filling that would keep me full throughout any active morning.

During the planning phase of my trip, I was trying to figure out what I could easily make for breakfast. Most days I would normally just grab a breakfast bar or a yogurt. I lacked refrigeration and I didn’t feel like dealing with the hassle of a cooler with ice, so yogurt was off the table. The breakfast bars work in a pinch but they really don’t keep you full for very long.

I had the idea to try and make some sort of overnight oats. So I picked up the ingredients and without even trying it, I hit the road.

Luckily I loved them and these overnight oats became a staple in my diet.

And super simple to make. All you need is:

  • Old fashioned oats
  • A scoop of chocolate protein powder
  • A spoonful or two of peanut butter
  • And If I’m feeling fancy – flax seeds and dried cherries

Combine all ingredients, top it off with water (if you like it on the drier side use less water), and let it set overnight. And just like magic, it turns into the perfect consistency in the morning.

Although not the prettiest, this breakfast gave me the energy to start everyday and was perfect a quick meal while driving down the road or one I could sit and enjoy in a beautiful place.

And I never got tired of it! I liked this breakfast so much that I still eat it nearly everyday.
